It depends, as with most questions. I'll answer the voltage, but since current is depending on load size, it will change from fixture to fixture – unless you're talking about a constant current series system.
In my experience, the most frequent voltage in the United States and Canada is 120V or 240V. Depending on the scenario, there may also be 208V or 277V available. Modern LED lights often use "Voltage Sensing Drivers" that can tolerate 100–300V. HID lights such as Sodium, Mercury, or Metal Halide may include "multi-tap" ballasts that may function on several voltages but need wiring to be adjusted when the voltage changes.
On projects where a large number of lights are linked together over a long distance (such as on a highway), you may see 347V (mostly in Canada), 480V (mostly in the US), or in uncommon instances 600V (I've heard of it in both Canada and the US, but it's unusual).
Some street lighting circuits are connected in constant current series (I've only seen this in the United States, but it might as well be found in Canada). In the case of series circuits, they are often identified by amperage rather than the voltage (i.e. 6.6A, 7.5A, or 20A). The current remains constant in this situation, while the voltage fluctuates with the load. It is fairly unusual to come across series circuits with operating voltages as high as 4500V. (voltage is load-dependent). They are, nevertheless, rare throughout most of the nation.
